During this interactive demonstration, Pine Street Market owner and chief butcher Rusty Bowers and his team will break down a whole Riverview Farms pig while explaining various cuts of meat and the nuances of whole animal butchery. In addition to learning about the process, participants will have the opportunity to cut their own chops and help grind pork. Lunch and refreshments are included, as class participants will try various cuts right off the Big Green Egg on property.
Classes are held at Pine Street Market in Avondale Estates. Cost is $125 per person. Refunds are not available for missed classes. Five “Early Bird Class Tickets” are available at a 10% discount up until two weeks before the class date. VIP Class Tickets ($155) include a pound of Pine Street Market sausage and a Pine Street Market t-shirt.
